Of course, safety should always come first, and we recommend the following to ensure that your barbecue is safe, and great fun.

1. Prepare properly. It’s simply not worth taking risks when you are feeding your friends and family, so ensure that your hygiene standards are high and your food is safe to eat. Wash your hands thoroughly before and after handling food, and use separate utensils for raw and cooked meat, which must also be kept separately from each other.

2. Chill and cover foods. Keep all foods covered or chilled until they are needed, and ensure that any frozen foods have fully defrosted before they are cooked. Do not leave salads or other perishable food items out in the sunshine for long periods of time, and be aware that chopped onions can attract bacteria so should be cooked straight away.

3. Clean your barbecue well. Keeping separate utensils for your barbecue is a good idea, and cleaning these, and the barbecue itself, well before use is essential. Use a scourer or brush to ensure the grill is very clean, and rinse it well to get rid of any soap residue.

4. Cook food thoroughly. When barbecuing, it’s very important to make sure that food is cooked all the way through. Cook meats until the juices run clear, there is no pink meat remaining, and they are piping hot throughout. A food thermometer can be helpful to check that food is cooked properly, and it can help to precook meat in the oven first and finish off on the barbecue, especially if you are pressed for time.

5. Treat leftovers with care. Leftovers can be used for lunches the following day if they are properly treated, so ensure that they are covered as soon as possible and left in a cool area. They should be put in the fridge within 2 hours, and eaten within 3 days. It is important to throw away any food that has been left out in the sunshine, as this can be a dangerous source of bacteria.
