Ingredients:
1 Aubergine Sliced Lengthways
2 Courgettes Sliced Lengthways
8 spring onions blanched for 2 minutes in boiling water
1 red pepper deseeded and cut into 4
1 yellow pepper deseeded and cut into 4
12 Asparagus spears trimmed
Olive oil for brushing
Salt & pepper to taste
(Dressing)
1 shallot peeled and chopped
1 red chilli deseeded and finely chopped
3 garlic cloves finely chopped
8 basil leaves ripped into pieces
8 Tablespoons extra virgin olive oil
2 Tablespoons sherry vinegar
Directions:

Brush the vegetables with the oil and season with salt & pepper. Cook on the Barbecue on both sides until tender, approx 3-4 minutes depending on the vegetables.
Combine all the ingredients for the dressing together and spoon over the vegetables.
