Ingredients:
1 bag baby new potatoes cooked until just tender
(Dressing)
100ml olive oil
Finely grated zest of 1 lemon
2 tablespoons lemon juice
2 garlic cloves crushed
2 tablespoons chives chopped
Salt & pepper to taste
Directions:
Whisk together all the dressing ingredients except the chives. Toss the potatoes in the dressing and leave for 20 minutes. Thread the potatoes on to metal skewers and cook on barbecue for 2-3 minutes until lightly charred. Mix the chives into the remaining dressing and add some more lemon juice and salt and pepper to taste. Spoon over the potatoes and serve at once
