Ingredients
500g Pork Fillet cut into 24 Pieces
1 Tablespoon Oyster Sauce
1 Tablespoon Soy Sauce
1 Tablespoon Rice Wine Vinegar
¼ Teaspoon Ground white pepper
1 Tablespoon Finely Chopped Chilli
1 Tablespoon Grated Fresh Ginger
1 Shallot finely Chopped
24 chunks of fresh pineapple cut the same size as the pork

Directions
Heat the oil in a saucepan and add onion and carrot and cook over low heat for 3 minutes.
Add the mince meat and turn up heat. Cook and stirr until browned.
Add wine, garlic and simmer until wine has evaporated.
Season with salt and pepper and add tomatoes.
Simmer for 30 minutes – stirring often to prevent sticking.
