Ingredients
3 Tablespoons Peanut Butter
2 Tablespoons Soy Sauce
3 Tablespoons Lime Juice
3 Chicken Breasts
2 Cloves Garlic
3 Tablespoons Pure Honey
1 ½ Tablespoons Mild Curry Powder
6 Tablespoons Coconut Milk
Directions
Cut meat into strips, squeeze juice from lime, crush garlic, combine in a bowl with soy sauce, peanut butter, honey.
Marinade meat in the bowl for at least 3 hours or overnight covered in the fridge.
Place meat on Wooden or Metal skewers and grill for 3-4 mins on each side.
Sauce: Put remaining marinade in a pan, bring to the boil, add coconut milk, and cook for 1 min until thickened.

Serve skewers with the sauce on the side as a dip or smother the sauce over the chicken and Enjoy.
