Ingredients:

1.5kg Red Cabbage
2 Medium Onions peeled & chopped
4 Green Apples peeled,cored & chopped
Zest and juice of 1 Orange
2 tsp ground Mixed Spice
100g light Brown Sugar
3 tbsp Cider Vinegar
300ml Cider
25 g Butter
Salt & Pepper

Directions:

Remove outer leaves from cabbage, core and slice thinly.
Layer the cabbage on the bottom of a saucepan, followed by some onions,apples,zest,spice,sugar and salt & pepper.
Continue to create layers until all the ingredients are used.
Pour over cider and vinegar and dot the butter on top.Bring to the boil and cover. Simmer on low for 1 hour until tender.[/fusion_text]
