Ingredients
2 tbsp vegetable oil
2.5kg O Crualaoi’s topside of beef
½ tsp Dry Mustard Powder
½ tsp Ground Black Pepper
1 tsp horseradish sauce
½ tsp Salt

Directions
Rub oil over the beef.
Mix dry ingredients together and the horseradish sauce and rub well into beef.
Place beef in a roasting tray and pour in 2 cups of water, cover with tin foil.
Preheat oven to 160 C and roast for approx 3 hours. Remove foil and roast for a further 20 minutes until nicely browned.
Remove from oven and allow to rest on carving dish (covered with foil) for at least 15 minutes – this makes the meat much easier to carve and will keep it juicy.
Pour in Tub of O’Crualaoi’s Gravy into roasting tray and bring to a boil.
Serve with potatoes and seasonal vegetables.
