Ingredients:
•2 lbs of nicely marbled steak pieces
•2 large onions, roughly sliced
•2 cloves of garlic, diced
•1 tbsp of brown sugar
•1 tbsp of plain flour
•200 mls of Murphy’s Irish
Stout
•300 mls of water
•1 tbsp of red wine vinegar
•1 tbsp of wholegrain mustard
•Pinch of ground cloves
•Sprig of fresh thyme
•Olive oil
•Salt & Pepper for seasoning
Method:
1.Preheat the oven to 160 Degrees
2.Heat 1 tbsp of olive oil in a deep pan
3.Brown the steak pieces in the pan in 2 batches and set aside in a casserole dish
4.Add another tbsp of olive oil to the same pan and sauté the onions over a
medium heat until they are soft
5.Add the garlic and cook the garlic until fragrant (i.e. you can smell it!)
6.Add 1 tbsp of plain flour and 1 tbsp of brown sugar to the onions & garlic and mix
together over a medium heat
7.Add the rest of the ingredients to the pan and stir to mix well
8.Pour the mixture over the steak pieces
9.Cover the casserole dish and cook in the pre-heated oven for 1.5 hours to 2 hours
at 160 degrees
10.Enjoy over buttery, garlic potatoes!
