Ingredients:
2 Racks of Lamb (ask the butcher to prepare them as a guard of honour)
100g Fresh Breadcrumbs
1 tbsp Pesto
1 tbsp Mint Sauce
1 tspn Dijon Mustard
Olive Oil
Season with Salt & Pepper
Directions:
Heat Oven to 190c
Season the lamb with salt & pepper and cover the bones of the racks with tin foil.
Brush the lamb with a little olive oil and roast in the oven at 190c for 15 mins.
Remove and let cool a little.
Mix breadcrumbs with pesto and Mint sauce.
Brush the lamb with the mustard and cover the meat
with the breadcrumb mix.
Roast in the oven for 10 mins until a nice crust has formed on the stuffing.Let relax for 5 mins before carving.
