Breaded Bacon Chop
• 900 g Loin of Bacon , boneless and without the streaky end
• 100 g seasoned white flour
• 1 egg, some milk
• Dried or fresh breadcrumbs
• Oil and unsalted butter for frying
Irish Whiskey Sauce
• 225 g sugar
• 80 ml cold water
• 6 tablespoon Irish Whiskey
• 60 ml hot water
Scallion Champ
• 6-8 Potatoes peeled
• 1 Bunch of scallions finely chopped
• 300-350 ml creamy milk
• 100grm butter


1. Cover the Bacon with cold water, bring to the boil, reduce the heat and simmer for 30 minutes until the bacon is three quarters cooked. Remove rind and trim away the fat.
Allow to cool, this can be cooked to this point the previous day.
2. Slice the chops into 2cm slices, dip in flour, egg and crumbs. Allow to set in the fridge for thirty minutes or the freezer for ten minutes if you are under time pressure.
3. Heat oil and butter in a thick based frying pan, brown the chop on both sides and put into a preheated oven for 10 minutes to finish cooking. Place a fried half Banana on
top of the chop (delicious).

Irish Whiskey Sauce
1. First make the caramel: Put the castor sugar and 80 ml of cold water into a heavy based saucepan, stir over a gentle heat until the sugar dissolves and the syrup comes to the boil.
At this stage REMOVE the spoon and don’t stir again. Continue to boil the syrup until the liquid becomes a chestnut brown colour.
2. Remove from the heat and immediately add 60 mms of HOT water, the liquid will bubble and boil up, be very careful and gently move the saucepan around to amalgamate the caramel
and the hot water. Return it to a low heat and add in the whiskey. You can stir it again now and once the liquid has come together the sauce is finished and it will keep in a jar in the
fridge forever.
