Ingredients
4 Barberry Duck Breasts
1 Packet of mangetout
1 Sweet chilli Pepper(De- seeded and sliced)
2 Shallots(Peeled and sliced)
1 tblspn toasted sesame oil
1/2 Tub O crualaoi Plum Sauce
1 Glass Port
Directions
Place pan on gas until very hot.
Place duck breasts skin side down and cook for 3 minutes until browned.
Turn over and cook for another 3 minutes until cooked . Turn back on skin and place in oven at 170c for another 5 mins.
Take out and remove from pan and place on a plate to relax.
Remove the duck fat from the pan and add port and scrape clean.
Add plum sauce and bring to a boil.
In a separate pan add sesame oil and toss in Mangetout, Chilli and shallots.Cook for 2 mins. Carve the Duck.
Divide mangetout onto 4 plates. Place Duck on top and glaze with some sauce.
(If you prefer duck well done just leave in the oven for another 5 mins)
