Keeping Christmas Running Smoothly | Tips That Make a Real Difference

1. Plan your oven timeline
A stuffed turkey breast cooks faster than a whole bird. Choosing cooked ham or cooked spiced beef frees up oven space if you are worried about space. Plan timings early and the day feels calmer.

2. Make space in the fridge and store your turkey safely
Fresh turkeys must be refrigerated immediately on collection.
Here’s what we recommend:
• Collect/buy as close to Christmas as possible
• Refrigerate or freeze immediately on returning home
• Cook fresh turkeys within 2 days
• Transport in a cool bag
• Keep raw turkey separate from ready-to-eat foods
Simple steps that preserve both safety and quality.

3. Keeping everything piping hot
Warm plates keep food hotter for longer.
Did you know that you can use the microwave to heat your plates? Just be sure to:
• Use microwave-safe plates
• Warm gently, around 1 minute for a stack of 6 plates
• Test beforehand, saves on oven space and ensures your plates are the perfect temperature.

Rest your meats
Cover loosely with foil, resting improves tenderness and they stay hot for longer than you might think.

Keeps vegetables/sides in a warm oven
70 to 90°C is ideal.

Carve just before serving
Keeps the flavour and heat where it belongs.

Prep Ahead | The Secret to a Calm, Enjoyable Christmas

Make-Ahead Mashed Potatoes (Kevin Dundon’s Method)
Make your mash on Christmas Eve or early Christmas morning. Mash as usual with milk, butter & seasoning,  then store in a covered microwavable container.
When ready to serve:
1. Reheat mash in the microwave until hot
2. Warm a little milk in a pot on the stove
3. Add your hot mash and whip together
You’ll get fresh, fluffy mash with no last-minute stress.

Carrots | Prep & Freeze (can do this weeks before Christmas)
1. Peel and cut
2. Blanch 2 to 3 minutes
3. Cool in iced water
4. Dry well
5. Freeze
Cook straight from frozen.

Parsnips | Honey Toss & Freeze (can do this weeks before Christmas)
1. Peel and cut
2. Blanch 2 minutes
3. Cool and dry
4. Toss lightly in honey
5. Freeze
Roast from frozen for beautifully caramelised parsnips.

Brussels Sprouts | One Simple Prep Option
Trim, halve and store in the fridge the night before.
On the day, pan-fry or roast quickly, no need for anything more complicated.

Roast Potatoes | Part-Cook & Freeze
1. Peel and cut
2. Parboil 8–10 minutes
3. Drain and roughen edges
4. Coat in goose fat or oil
5. Freeze on a tray, then bag
Roast from frozen. Extra crisp, with no morning prep!
